  • Number of bites: With canapés, it helps to count how many each guest will get. Depending on the size, allow around 2–5g of caviar for each one. Three canapés with 2.5g each, for instance, come to 7.5g per guest. Serve five and that goes up to 12.5g.
  • Serving method: Ready-made bites make portions easier to control. With self-service, some guests may take more than others. In that case, use the higher end of the suggested range.
  • Accompaniments: Blinis, potato, crème fraîche and other accompaniments can make the serving more substantial. But there is no fixed amount to deduct when serving caviar with them.
  • Caviar variety: There is no reliable reason to change the amount depending on the type.
